Les cochons ibériques vivent dans un espace naturel typiquement méditerranéen composé de vastes pâturages, principalement de chênes verts et de chênes lièges. Leurs fruits, les bellotas (glands), constituent l'alimentation principale des cochons élevés en liberté dans de vastes fincas (propriétés) c'est la condition indispensable pour obtenir un authentique jambon ibérique de bellota. Quand survient la montanera, la saison des glands, d'octobre à janvier, les cochons se nourrissent quasi exclusivement de glands (entre 600 à 800 kg/animal), les jambons seront ensuite affinés a minima 24 mois et jusqu’à 48 mois pour les meilleurs.
